The food of the Indian Desserts

Dal-Batti-Churma is the traditional ethnic food of the Marwar region of India. It is a complete and balanced meal with lentil which is dal, bread which is batti, and a sweet which is churma. is healthy, tasty and nutritious. A colorful dish that displays a beautiful shade of yellow, brown and light brown is indeed a treat to the eyes. From marriages to daily dinners, it is cooked and served with pleasure. It can be enjoyed at any time of the day as a snack or a three-course main meal. Very aromatic and light on spices, it is the staple food of the region. It promises to be a royal treat to your stomach, very simple yet satisfying. Please order this dish in any authentic Indian restaurant and you will bless me for life.

For those of you who wish to cook this exotic recipe, make a stiff flour dough and then separate it into two parts. With one part, make small golf-ball size roundels with fillings. You can stuff these roundels with any filling, be it spicy potatoes, vegetables or a combination of spices. Then, let them bake until golden brown and later dip them in hot oil, but mind you it has to be pure desi ghee or white clarified butter. Fully soaked and drenched in the mystic aroma, your batties are now ready. With the second portion of dough, make small balls and then, roll out into flat round shapes. Deep fry them and later crush them along with the proportionate amount of sugar in a grinder. The delicious churma is ready to serve. The dal is made by boiling yellow lentil in water with salt, turmeric and chillies. The platter now has hot simmering dal in a bowl, a neat heap of churma with a few batties alongside. This is a mouth-watering delicacy to literally die for... I mean pounce and eat.

In the desserts where there is scarcity of water and hot climate, this dish is easy to make and store. This tempting dish has not lost its original importance because of the taste, grandeur and simplicity. It is not just tasty but matchless, you will always want to gobble more.
